IT’S PARTY TIME IN THE SCHOOL KITCHENS!

There’s something happening in Swedish institutional catering. Talented people are emerging and shaking things up. And it’s not only the dinner guests that appreciate these festive interruptions to everyday life.


Everyone who is involved in cooking good food and putting time and effort into planning and organising festivities is noticing how it creates a feeling of solidarity, job satisfaction and professional pride. The fact is that cooks who liven things up in the kitchen are heroes as far as their guests are concerned.

Roughly three quarters of all the food we eat outside the home is prepared by public institutional kitchens.

“The good examples that we talk about in the exhibition show that catering services have excellent opportunities for playing a key role in the sense of wellbeing at schools and within elderly care. In terms of future developments, this is a chance for the country’s major catering firms to create their own image,” says Göran Ekberg, Project Manager for GastroNord.

Exciting changes in institutional catering show that there’s now a bit more room for creativity in Swedish institutional kitchens. This is encouraging chefs from restaurants, both women and men, to apply for positions at school canteens and homes for the elderly. 
Several institutional kitchens are inviting restaurant chefs to make special appearances. It’s an excellent way for everyone working in institutional catering to share knowledge and experiences with restaurant chefs. It creates a food culture that puts a positive slant on both festive occasions as well as everyday meals.

Restaurant of the Future is a recurring exhibition that displays new ideas and developments in the industry. Four years ago it was service that was the issue, then it was food as a brand. Now we want to inspire people to turn institutional catering into one big party. The exhibition focuses on school meals and catering in homes for the elderly.
